Otthu Shavige / Pressed Rice Noodles
Traditional recipe of Otthu shavige..
Am not sure, but its one of the old mysoreans classic recipe i have read it long back.
This is one of the signature dish my mom prepares.
Though it takes quite some time to prepare this.. we all like it .. its freshly made shavige and the further variations using this as base has no limitation.
In different region of places, its called by different names like idiyappam in TamilNadu and kerala .
We get all kinds of ready Noodles in market, But this is definitely going to be a different one from all.
You can keep trying your own variations.. in sweet / Spice of choice keeping this as base.
Am sharing this recipe, to keep most of our friends updated with traditional dishes :)
To do this.... one thing is must.. that's practice and patience
Cooking Ingredients:
Rice flour -2 Cups
Water - 4 Cups
Cooking Oil - 1 tbsp
Salt to taste
Things Required for this preparation are:
Shavige Oralu / Noodles making mould/ idiyappam mould and you can find it in shops made out of different materials like Wood (Olden style), brass, Steel
Idli plates and Idli Cooker
Preparation:
- Bring the measured water and salt to boil.
- As the water begins to boil, add measured Rice flour
- And close the lid
- Bring the flame to low and let it get cooked for 20 to 30 minutes.
- Then mix well, till u find no lumps.
- Knead the flour well by adding 1/2 tbsp of oil.
- Now make the dough balls
- Smear layer of oil over idli plates
- Put it in the shavige machine and press it over the idli plates
- Same as idli cooking proceedure
- Steam it in idli cooker for 7 to 10 minutes
- The traditional otthu shavige is ready.
- This forms base for shavige bath, shavige uppittu, Shavige payasa, shavige kayi halu...... and lots more :)
