Beetroot Palya

BEETROOT PALYA

A Iron rich vegetable, considered to be healthy one is non other than beetroot.
Since childhood, have been liking this palya (mom made).. might be then, for sake of colorful dish i used to like :)

Mom prepares this simply superb..


Ingredients:
Beetroot -1/2 kg
Ginger - 3 inch
Garlic pods- 15 no's
Sambar powder- 2 tsp
Cooking oil - 1 tbsp
Cilantro leaves -3 sticks
curry leaves- 2 sticks
Mustard -1 tsp
Tomatoes (Ripen) -  1 medium sized
Grated coconut - 1 Cup
Salt to taste

Preparation:
 Grind: Coconut, cilantro leaves, ginger, garlic 
  • Clean the beetroots and chop its head and tail.
  • Steam it for about 10 to 12 minutes.
  • Then after cooling it to room temperature,
  • Peel the outer skin and chop it fine.
  • In pan, heat the oil.
  • Add some mustard seeds and let it splutter.
  • Drop in some curry leaves
  • Then add the ground mixture
  • And fry the  masala for about 3 min
  • Then add sambar powder and then chopped tomatoes 
  • Fry till tomatoes are mushy and done
  • Finally add chopped beetroot and saute it for 2 min on medium flame.
  • If you need gravy kind... then add some water and bring to gravy consistency.
  • This is the best along with chapatis.. and north Indian rotis
