VangiBath

Vangibath, one of the breakfast i used to take a pack of it in my college days.
And could hardly get a spoon of it.... since most of my friends liked my amma prepared Vangibath.

Anyways i like people enjoy thier food.. so never mind.. I liked my friends enjoying my pack of vangibath.
Usually Vangibath refers to the dish prepared out of Aubergine. While mom tries in capsicum as well in tomato too...
This may be an alternate ideas for people who likes Vangibath without brinjal ... So can try the same recipe with other vegetables like capsicum/ tomato.

Well the recipe of Vangibath is as follows


Ingredients:
Brinjal (Mysore badanekayi) - 250gms
Rice- 250 gms
Cooking Oil - 1 tbsp
Mustard seeds- 1tsp
Curry leaves -2 sticks
Tamarind- small marble size
Vangibath powder- 1 tbsp
Grated Copra- 3 tsp
Salt to taste 

Preparation:

  • Clean and Cook the rice.
  • Allow the rice to cool by spreading it .
  • Meanwhile Prepare the vangibath gojju as follows
  • Clean and chop the brinjal in length wise
  • Put the pan on flame 
  • Heat the oil in pan 
  • Add mustard, let it splutter, Then add curry leaves.
  • Then add chopped brinjal and fry for 2 min continously..
  • And after tenderness in brinjal add vangibath powder, salt  and fry for min
  • Later add the tamarind juice(Soak the tamarind in little water and take the juice).
  • Now it forms gojju.
  • Keep stirring it for 2 min Then add grated copra.
  • Mix in the cooked rice and Vanginath is ready to eat..
