Puliyogare

 Puliyogare is authentic dish of Iyengars.. Its one must dish and finds place in plantain leaf  for most of the festival occasion :)
Its again a tangy, a bit hot.. a bit sweet and crunchy peanut in between each munch.... yummm :)
You can find ready mixture of puliyogare powder in market.. as well can try it in your kitchen.. shortly will be posting the recipe for Puliyogare powder.. :)

 PULIYOGARE RICE

Ingredients:
Cooked rice- 2 Cup
Pea nut- fist full
Mustard seeds- 1tsp
Red chilly (Byadgi)-3 to 4 no's
Curry leaves- 2 sticks
Black Chick Peas- 1 tsp
Tamarind juice- 1/2 tbsp
Jaggery - 3 to 4 tsp
Puliyogare Powder -1 tbsp
Cooking oil(Ground nut oil preferred)
Salt to taste

Preparation:
  • In heavy bottomed pan, heat oil.
  • Throw in some mustard seeds, and let it splutter.
  • Add curry leaves and then whole/partial broken Red chilly.
  • Then add peanut seeds and roasted chick peas and fry for a min or till the peanut is done.
  • Add Puliyogare powder and keep it aside.
  • Now prepare, jaggery, tamarind sauce as follows.
  • In another pan mix the tamarind pulp and broken jaggery and keep stirring for 2 to 3 min.
  • Till the consistency of jam.
  • And then add this jaggery-tamarind mixture to the above puliyogare mixture, add some salt to taste 
  • Mix all together and add cooked rice and mix well
  • Here the puliyogare is ready to serve.
